Don’t knock until you try it! This is a gluten free, dairy free, grain free AIP and low histamine compliant breakfast marvel!

Ingredients
- A large sweet potato, chopped in to small chunks
- 1 cup dairy free milk
- Maple syrup (optional)
- Nuts, seeds, berries, banana (optional
5 mins prep / 10 mins cooking time
Method
- Steam the sweet potato until soft and well cooked.
- Place the cooked sweet potato in a bowl and mash with a fork.
- Sprinkle with some cinnamon (optional) and top with hot milk of your choice.
- Top with banana, berries, nuts/nut butter, seeds or just eat au natural! (please note banana, nuts and seeds are not histamine friendly and nuts and seeds cannot be eaten if you are on the AIP diet)
Top Tips:
This sweet potato porridge is also amazing with a dollop of rich, dairy free coconut yogurt instead of hot/cold milk!
This is a nutritious gluten free, grain free alternative to oat porridge and an early morning life saver to those who cannot tolerate oats (even gluten free oats!). It also works with squash.
Save time in the morning by peeling and chopping the sweet potato the night before. You could always use some leftover sweet potato and warm in the morning.
Sweet potatoes are a rich source of fibre and the antioxidant, beta carotene, which your body converts into vitamin A as well as a source of vitamins B, C and D, iron, calcium, potassium, selenium and magnesium. Phew, no wonder they call it a superfood!
